Soy flour
6 ounces
Granulated sugar
1 1/2 tablespoons
Baking powder
2 1/2 teaspoons
Ground cinnamon
3/4 teaspoon
Ground nutmeg
1/4 teaspoon
Salt

1 1/4 cups
Soymilk
1 1/4 cups
Water
2 1/2 tablespoons
Soybean oil
11 ounces
Pineapple, crushed, canned
5 ounces
Dried apricots, diced
Instructions for Apricot Muffins

Combine flours, sugar, baking powder, spices and salt; mix well.

Make a well in center of dry ingredient mixture and add eggs, soymilk, water, oil, pineapple and apricots; mix only until moistened.

Spoon mixture into oiled muffin tins.

Bake at 400° F for 12 to 15 minutes, or until wooden pick inserted near center comes out clean.
