![]() Filled Sandwich Creams Recipe

Instructions for Filled Sandwich Creams: In a large mixer bowl combine margarine, Sucanat® and egg. Beat at medium speed. Turn off mixer and scrape down sides of bowl. Mix until creamy (2-3 minutes). Add all remaining cookie ingredients and restart mixer on low speed and beat until well mixed. Cover; let stand at room temperature 30 minutes. Heat oven to 350° F. Spread tablespoonful of cookie dough with back of spoon, into 1 ½ inch circles on cookie sheet. Bake for 8 minutes or until puffed and set. Remove and completely cool on a cookie rack. Spread about 2 Tbsp. frosting onto flat side of one cookie, top with a second cookie, flat side down. Squeeze together gently. Immediately roll edges of frosting in candy sprinkles.
