Ingredients:


1/2 cup Margarine, softened
1 cup Sucanat®
1 Large egg
1 3/4 cups Unbleached white flour
1/2 cup Low fat or defatted soy flour
1 cup Vanilla flavored low-fat soymilk
1/3 cup Unsweetened cocoa
1 teaspoon Baking powder
1/2 teaspoon Baking soda
1/2 teaspoon Salt
12 ounces Soft whipped white frosting
1/3 cup Multi-colored candy sprinkles (optional)
Instructions for Filled Sandwich Creams:

In a large mixer bowl combine margarine, Sucanat® and egg.  Beat at medium speed.  Turn off mixer and scrape down sides of bowl. Mix until creamy (2-3 minutes).

Add all remaining cookie ingredients and restart mixer on low speed and beat until well mixed. Cover; let stand at room temperature 30 minutes.

Heat oven to 350° F.

Spread tablespoonful of cookie dough with back of spoon, into 1 ½ inch circles on cookie sheet.

Bake for 8 minutes or until puffed and set. Remove and completely cool on a cookie rack.

Spread about 2 Tbsp. frosting onto flat side of one cookie, top with a second cookie, flat side down.  Squeeze together gently. Immediately roll edges of frosting in candy sprinkles.
