Cooked soybeans, drained
2 cups
Water
1 3/4 cups
Chicken broth (low sodium or home made)
1/4 cup
Carrot, chopped
1/4 cup
Onion, chopped

Tomato, chopped
2 tablespoons
Fresh thyme *
2 tablespoons
Fresh basil *
1/2 teaspoon
Lemon zest peel, grated
1 teaspoon
Lemon juice
1 tablespoon
Dried parsley, minced
1/4 cup
Celery, chopped

Garlic clove, minced
Instructions for Harvest Time Soy Soup

Presoak and cook the soybeans.

Combine all the ingredients and bring to a boil. Reduce head and simmer 30 minutes. Stir occasionally.

Cook until vegetables are a tender crisp.

Salt and pepper to taste.
