Hot and Sour Soup
Ingredients

2 1/2 us gallons
Water
4 pounds
Soft tofu, slivered
4 pounds
Cabbage, thinly sliced

Vegetable bouillon cubes
1 cup
White vinegar
2 teaspoons
Cayenne pepper
5 ounces
Cornstarch
1 1/2 cups
Water
6 ounces
Scallions, chopped
1 cup
Soy sauce
Instructions for Hot and Sour Soup
Bring water to a boil. Add tofu, cabbage and bouillon cubes to boiling water and simmer 3 minutes.
Add vinegar and cayenne pepper. Bring back to boil.
Dissolve cornstarch in water and add to soup. Stir.
Garnish soup with scallions and soy sauce.
