Ingredients:


4 cups Soybeans*, cooked and ground
1 Medium onion, chopped
1 Garlic clove, minced
2 tablespoons Olive oil
1 tablespoon Dried sweet basil leaves
1 pound Tomatoes, diced 
30 ounces Tomato sauce
4 1/2 ounces Mushrooms, canned (optional)
2 tablespoons Parsley, chopped
1/4 teaspoon Black pepper
2 teaspoons Salt
1 tablespoon Dried oregano
1/4 teaspoon Dried thyme
1/4 teaspoon Dried rosemary
2 tablespoons Brown sugar
Description:

Soybean preparation:

To each cup of soybeans add 3 cups cold water.

Let stand overnight.  After soaking, drain beans, add fresh water to cover; then simmer in covered pot for 2-3 hours. To pressure cook, allow 20 minutes at 15 lbs. pressure.

Add 1 Tbsp. oil per cup of beans to reduce foaming.  Pressured beans will be softer than those cooked normally.

Grind beans in blender or food processor.

Option:  Substitute 2 cups soybeans and ½ lb. ground meat.


Instructions for Spaghetti Sauce:

Sauté onion, garlic and mushrooms in olive oil until onion is transparent.

Add remaining ingredients and simmer a few minutes.
