Tofu Basil Pasta Sauce on Fettuccine

Ingredients:


1/2 cup Parmesan cheese, freshly grated
1 tablespoon Basil, freshly chopped
1 tablespoon Parsley, freshly chopped
10 1/2 ounces Silken soft tofu, drained
1 teaspoon Onion powder
1/4 teaspoon White pepper
2 Garlic clove, minced
2 tablespoons Plain lite soymilk
4 cups Cooked fettuccine pasta, hot
Instructions for Tofu Basil Pasta Sauce on Fettuccine:

Grate cheese.  Chop basil and parsley.  Set aside.

In bowl of food processor or blender, blend tofu until smooth.  Blend in onion powder, white pepper, and basil.

In large skillet, heat soy oil over medium heat.  Add minced garlic and sauté 1 minute.

Turn down heat to low and add the blended tofu mixture.  Stir in Parmesan cheese, cook 2 to 3 minutes, stirring constantly, over low heat until cheese melts.  Add soymilk and stir to blend and to thin sauce.

Serve immediately over hot, cooked pasta.  Top with chopped parsley.
