Basil Edamame Dip
Ingredients
- 1 ½ cup frozen edamame
- 2 tbsp fresh basil, roughly chopped
- 1 ½ cup oil of choice (I like to use soybean oil)
- 2 tsp minced garlic
- Juice of ½ lemon
- Water to thin
- Salt
- Pepper
Instructions
- Add edamame to a bowl with ½ cup water and microwave for about 4-5 minutes, until warm and cooked through. Drain water.
- Add edamame, basil, garlic, oil, salt and pepper to a food processor or blender and blend until smooth.
- Store dip in an airtight container in the fridge for 3-4 days.
