Basil Edamame Dip

Ingredients

  • 1 ½ cup frozen edamame
  • 2 tbsp fresh basil, roughly chopped
  • 1 ½ cup oil of choice (I like to use soybean oil)
  • 2 tsp minced garlic
  • Juice of ½ lemon
  • Water to thin
  • Salt
  • Pepper

Instructions

  1. Add edamame to a bowl with ½ cup water and microwave for about 4-5 minutes, until warm and cooked through. Drain water.
  2. Add edamame, basil, garlic, oil, salt and pepper to a food processor or blender and blend until smooth.
  3. Store dip in an airtight container in the fridge for 3-4 days.
