Soybean Cowboy Caviar

Ingredients

  • Base:

  • 3 roma tomatoes, diced

  • 1 medium avocado, diced

  • 1/2 cup diced red onion

  • 1 (15-ounce) can black soybeans, drained and rinsed

  • 1 cup shelled edamame

  • 1 cup cooked corn

  • 1 medium orange bell pepper, diced

  • 1/3 cup cilantro, minced

     

    Dressing:

  • 1/3 cup soybean oil

  • 1/2 lime, juiced

  • 2 tbsp red wine vinegar

  • ½ tsp salt

  • ½ tsp pepper

  • ¼ tsp garlic powder

Instructions for Soybean Cowboy Caviar

Place base ingredients in a large mixing bowl and toss to combine.

In a small mixing bowl, whisk together dressing ingredients until combined. Pour dressing over the base mixture and toss to coat.

Serve with pita chips. Store leftovers covered in the fridge for 3-5 days.
