Soybean Cowboy Caviar

Ingredients

Base

  • 3 roma tomatoes, diced
  • 1 medium avocado, diced
  • 1/2 cup diced red onion
  • 1 (15-ounce) can black soybeans, drained and rinsed
  • 1 cup shelled edamame
  • 1 cup cooked corn
  • 1 medium orange bell pepper, diced
  • 1/3 cup cilantro, minced

Dressing

  • 1/3 cup soybean oil
  • 1/2 lime, juiced
  • 2 tbsp red wine vinegar
  • ½ tsp salt
  • ½ tsp pepper
  • ¼ tsp garlic powder

Instructions

  1. Place base ingredients in a large mixing bowl and toss to combine.
  2. In a small mixing bowl, whisk together dressing ingredients until combined. Pour dressing over the base mixture and toss to coat.
  3. Serve with pita chips. Store leftovers covered in the fridge for 3-5 days.
