Instructions for Dilly Carrot Soup: Heat oil in saucepan. Add onions and cook until soft. Add carrots, broth, soymilk, 2 tsp. dill, salt and pepper. Simmer for 20 to 25 minutes. Remove from heat and cool for about 5 minutes. Puree in batches using a blender or food processor. Return soup to saucepan. Add ½ tsp. dill, salt and pepper to taste, heat.
