All-purpose flour

Soy protein isolates
4 teaspoons
Baking soda
4 teaspoons
Baking powder
2 teaspoons
Grated lemon peel
2 teaspoons
Ground cinnamon
1 teaspoon
Ground nutmeg
1 teaspoon
2 cups
Coffee, cold
1 quart
Apples, pared, diced
12 ounces
2 teaspoons
4 ounces
Granulated sugar (Topping)
4 ounces
Brown sugar (Topping)
2 ounces
Walnuts, chopped (Topping)

Instructions for Easy Apple Spice Cake

Cream sugar and margarine until light and fluffy. Add eggs, one at a time, beating after each addition.

Combine flour, soy protein, baking soda, baking powder, lemon peel, spices and salt; mix well.

Add dry ingredients alternately with coffee to creamed mixture; mix well.

Mix in apples, raisins and vanilla.

Spread batter in oiled half baking sheet. Sprinkle with Topping.

Bake at 350°F for 45 minutes or until wooden pick inserted near center comes out clean.

Cut cake 6 x 8.
