Ingredients:


1 3/4 pounds Brown sugar
8 ounces Soy margarine
4 Eggs
1 1/2 pounds All-purpose flour
3 1/2 ounces Soy protein isolates
4 teaspoons Baking soda
4 teaspoons Baking powder
2 teaspoons Grated lemon peel
2 teaspoons Ground cinnamon
1 teaspoon Ground nutmeg
1 teaspoon Salt
2 cups Coffee, cold
1 quart Apples, pared, diced
12 ounces Raisins
2 teaspoons Vanilla
Topping
4 ounces Granulated sugar
4 ounces Brown sugar
2 ounces Walnuts, chopped
Instructions for Easy Apple Spice Cake:

Cream sugar and margarine until light and fluffy. Add eggs, one at a time, beating after each addition.

Combine flour, soy protein, baking soda, baking powder, lemon peel, spices and salt; mix well.

Add dry ingredients alternately with coffee to creamed mixture; mix well.

Mix in apples, raisins and vanilla.

Spread batter in oiled half baking sheet. Sprinkle with Topping.

Bake at 350°F for 45 minutes or until wooden pick inserted near center comes out clean.

Cut cake 6 x 8.
