Ingredients:


1 tablespoon Soy oil 
1 1/4 cups Onions, chopped
1 teaspoon Garlic, chopped 
1 cup Carrots, finely chopped 
16 ounces Canned garbanzo beans, drained
  (chick peas)
3 tablespoons Italian parsley, chopped, divided
2 1/2 cups Low fat plain soy milk 
3/4 teaspoon Salt
1/2 teaspoon Black pepper, ground
2 tablespoons Parmesan cheese, grated
5 tablespoons Roasted soynuts, salted 
Instructions for Garbansoy Soup:

In medium saucepan, sauté onions, garlic and carrots in oil until tender.

Add garbanzo beans, 2 Tbsp. parsley, soy milk, salt and pepper.  Simmer for 10 minutes.

Remove from heat; stir in Parmesan cheese.  Cool for about 5 minutes.

Place in food processor; puree until smooth. (May need to puree in two batches.)

Place ¾ cup into soup
