Ingredients:


1/2 teaspoon Oregano and thyme, dried, each
12 Red onion slices, grilled
12 Baby eggplant slices, grilled
1/8 teaspoon Black pepper
12 Zucchini slices, grilled
1/4 teaspoon Dried basil leaves, garlic powder
 and salt, each 
12 Red bell pepper slices, grilled
12 Firm water-packed tofu in slices, 1/4 inch
 thick, grilled 
1 Focaccia bread, sliced lengthwise
 in half, 10 inch long 
Description:
We recommend slicing the vegetables thinly before grilling for best flavor.
Instructions for Grilled Tofu and Vegetable Sandwich:

Combine oregano, thyme, basil, garlic powder, salt and pepper;  divide in half.

In a large bowl, toss grilled vegetables with half of the seasoning.

Placed grilled pieces of tofu in an even layer on bottom half of bread.  Sprinkle with remaining seasoning.

Place vegetables on top of tofu; top with bread.

Cut into six sandwiches. Microwave for 30 to 45 seconds or until slightly warm.
