Linguine with Soybeans and Garlic-Red Pepper Oil

Ingredients:


1 tablespoon Olive oil
1 tablespoon Soy oil
1/4 teaspoon Dried red pepper, crushed
2 Garlic clove, minced
6 cups Hot linguine, cooked without salt
 or fat
1 cup Canned soybeans, drained
1/4 cup Fresh parsley, chopped
1/4 teaspoon Salt
1/2 teaspoon Ground black pepper
Instructions for Linguine with Soybeans and Garlic-Red Pepper Oil:

Heat oil in nonstick frying pan over medium heat. Add red peppers and garlic, sauté until garlic is lightly browned. Remove from heat.

Cook the linguine in a saucepan until tender according to package instructions.  Drain the pasta.

Return pasta to the saucepan and add in the soybeans, parsley, salt and pepper. 

Heat over low heat, stirring frequently until the soybeans are heated, about 8 minutes.

Add the heated red peppers and garlic. Stir well and serve immediately.
