Ingredients:


4 tablespoons Miso
4 cups Water
1 tablespoon Soy oil 
3 cups Mushrooms, sliced
3/4 cup Leeks, sliced in half circles
1 teaspoon Garlic clove, minced
1 teaspoon Ginger, fresh, grated
1/4 teaspoon Salt
1/2 teaspoon Black pepper
3 tablespoons Dry sherry
Instructions for Mushroom Leek Miso Soup:

Dissolve miso in water.

Over medium-high heat, sauté mushrooms and leeks in oil until tender.

Add garlic and ginger; cook ½ minute.  Add miso dissolved in water, salt, and pepper; simmer 15 minutes.

Remove soup from heat, stir-in sherry.  Serve immediately.
