Textured soy granules, caramel colored
1 cup
Hot water
1⁄4 cup
Soy oil
1 1⁄2 cup
Onion, chopped
1⁄2 cup
Green pepper, diced
1 unit
Garlic clove, minced
1 teaspoon
Chili powder (optional)
1⁄2 teaspoon
16 ounces
Canned whole tomatoes
15 1⁄2 ounces
Kidney beans
1 teaspoon
3⁄4 cups
Rice, uncooked
33⁄50 cups
Cheddar cheese, shredded

Instructions for Nice Rice Bake

Rehydrate soy granules in hot water for 10 minutes.

Place oil in a large skillet. Add onion, green pepper and garlic. Sauté until vegetables are half cooked.

Add rehydrated granules, chili powder and salt. Continue to sauté 10 minutes. 

Add un-drained tomatoes, un-drained kidney beans, sugar and rice.  Mix thoroughly.

Place mixture in a 2-1/2 qt. casserole. Bake covered at 350° F for 1 hour.

Stir gently. Sprinkle with shredded cheese. Cover. Bake 5 minutes longer at 350°.
