Soy Cornbread Recipe

Ingredients:


1 cup All-purpose flour
1/2 cup Cornmeal
1/2 cup Soy flour
2 tablespoons Granulated sugar
1 tablespoon Baking powder
1/2 teaspoon Salt
1 cup Plain soymilk
1/4 cup Soy oil
1 Egg
Description:

The basic cornbread recipe is enhanced here by the addition of soy. Recipe from the National Soybean Research Laboratory Illinois Center for Soy Food’s Baking with Soy in the American Kitchen cookbook.

Instructions for Soy Cornbread:

Preheat the oven to 425°. Coat a 9² x 9² pan with cooking spray. 

Stir together the all-purpose flour, cornmeal, soy flour, sugar, baking powder, and salt in a large mixing bowl. Set aside.

Whisk together the soymilk, oil, and egg in a small bowl. Add the liquid ingredients to the dry ingredients and stir just until moistened. Pour the batter into the prepared pan. 

Bake for 20 to 25 minutes, until lightly browned and a toothpick inserted in the center comes out clean.
