Tofu Fried Rice

1 1⁄2 cup
Soy oil
2 ounces
Garlic, minced
5 pounds
Medium tofu, cubed
1⁄2 cup
Soy sauce
4 1⁄2 pounds
Onions, chopped
2 pounds
Celery, chopped
17 pounds
Brown rice, pre-cooked
1 cup

Instructions for Tofu Fried Rice

Sauté garlic in oil over medium-high heat.

Add tofu and stir-fry for 5 minutes.

Add soy sauce, onions and celery.  Continue stir-frying for 5 minutes.

Add cooked rice and water.  Stir-fry for 5 minutes over medium-high heat until rice is hot.
