Ingredients:


1 1/2 cups Soy oil
2 ounces Garlic, minced
5 pounds Medium tofu, cubed
1/2 cup Soy sauce
4 1/2 pounds Onions, chopped 
2 pounds Celery, chopped
17 pounds Brown rice, pre-cooked
1 cup Water
Instructions for Tofu Fried Rice:

Sauté garlic in oil over medium-high heat.

Add tofu and stir-fry for 5 minutes.

Add soy sauce, onions and celery.  Continue stir-frying for 5 minutes.

Add cooked rice and water.  Stir-fry for 5 minutes over medium-high heat until rice is hot.
