Tempeh Bacon “BLT” Sandwich

Ingredients

  • Ingredients:
  • 8 oz. tempeh
  • 8 slices of sprouted whole grain bread, toasted
  • 2 large tomatoes, sliced
  • 2 cups romaine lettuce
  • 1 avocado, mashed
  • ¼ cup mayonnaise

    Tempeh “bacon” marinade:

  • 1 tbsp soybean (vegetable) oil
  • ¼ cup soy sauce
  • 2 tbsp maple syrup
  • 1 tsp liquid smoke
  • 1 tsp smoked paprika
  • ½ tsp black pepper
  • ¼ tsp salt

Instructions for Tempeh Bacon “BLT” Sandwich

1. Preheat oven to 400 F and line a large baking sheet with parchment paper.

2. Slice tempeh into 16-20 thin “bacon” strips.

3. In a large bowl, whisk together tempeh bacon marinade ingredients. Add tempeh to the bowl and toss to coat. Set aside for 15 minutes.

4. Place tempeh in a single layer on the baking sheet and bake for 15-20 minutes or until browned and crisped. 

5. Assemble sandwiches with mayonnaise, mashed avocado, tomato, romaine lettuce and tempeh “bacon”.
